We've designed this class for those of you with Kamado cooking experience, but looking to expand your repertoire. We will assume that attendees on this Advanced Class are confident in controlling the temperature of their grill using the air vents. If you aren't confident with temperature control yet, then take a look at our Kamado Core Skills Masterclass, which may be better suited to you.
You can get Hands-On on this Class, so that you can get involved in both the preparation and cooking if you wish to, although the majority of this class focuses on technique and theory.
Your tutor will cook on various Kamados, including a Junior Joe, Classic II, Big Joe II and Big Joe III, although everything you learn can be applied to any ceramic grill for example, Big Green Egg, Monolith, Primo, PitBoss, Louisiana Grill, Aldi models as they all work on the same principle.
We'll show you how to prepare and perfect the cooking of the following dishes (subject to product availability);
- Smoked Tri-tip Steak
- Whisky Duck Breast
- Crispy Pork Belly
- Spatchcock Chicken
- Pulled Pork
- Grilled Salmon
- Sea Bass in a cast iron pan
- Dirty Corn
- Rotisserie Lamb or Beef

Your tutor will take you through the following skills and techniques and provide you with some new recipe inspiration;
- Smoking techniques and theory
- 'Dirty style' cooking
- Use of the Slo-Roller
- Different types of Smoking Woods and their applications
- Mastery of split-level cooking
It will be a friendly, intimate class where you can watch a Kamado expert in action, ask questions, and be well-fed and watered throughout - you eat everything that is cooked, or take it home with you!
The course will be held in our undercover purpose built BBQ area just outside of Hitchin, Hertfordshire SG4 7HD so come rain or shine you'll be sure to have a cracking day.
Please note, we will be cooking across a range of Kamado-style grills - if you'd like to see a specific Kamado model in action, please contact us in advance and we can see if this can be accommodated.
This is a cooking class, you'll be watching, learning, tasting and be invited to use a Kamado yourself at various intervals.
