Ready to step away from the burnt sausages and undercooked chicken? Our BBQ Foundations class is designed specifically for those ready to step up in the world of live-fire cooking. Whether you’ve just bought your first grill, you're assessing a new BBQ, or want to build your confidence, this course provides a supportive atmosphere where you’ll learn the skills needed to get great results.

We'll use a range of grills - gas, charcoal and smokers.

What We Cover:

We strip back the mystery of the grill, focusing on the essential techniques that make for a successful cook every time:

  • Fuel & Fire: Choosing the right fuel and mastering failsafe lighting techniques.

  • The "How-To": Understanding the difference between direct grilling and indirect cooking - and knowing when to use each.

  • Control the Heat: Managing temperatures, using thermometers, and using wood to add that perfect touch of smoke.

  • The Perfect Finish: Identifying exactly when your food is cooked to perfection.

The Format:

This is an interactive session, where you can get involves as much or little as you like. We’ll prepare the ingredients as a group, cooked across a variety of grills. You’ll help with the prep, watch our experts in action, and then sit down communally to enjoy the feast you’ve created.

To help you practice these new techniques, we’ll work through a range of versatile dishes, such as:

  • Smoked Thai-Spiced Chicken (Low and slow).

  • Roasted Pork Belly (Perfecting the crackling).

  • Marinated Lamb Leg Steaks (High-heat direct grilling).

  • Grilled Fish & Seasonal Vegetables (Delicate heat management).

  • Grilled Seasonal Fruit (The sweet side of BBQ).

As with all our classes, you’ll be well-fed and watered throughout. Everything we cook is eaten, so come hungry! We provide tea, coffee, and soft drinks to keep you going.
