Simply cook with the lid down and use the bottom and top vents to control the flow of air through your kamado to change the ferocity of the fire inside, and hence the temperature. By using the Heat Deflector that comes as standard you can cook 'indirectly', which is like a regular oven - the heat just rolls around inside.

To use a kamado as a smoker you add some wood chunks to the charcoal below, and insert the heat deflector.

When you want to grill some sausages and burgers in typical fashion, you can remove the deflectors and cook 'direct' - the food can see the flames directly beneath.

The important thing to look for in a ceramic kamado is the warranty period, because an inferior, cheaper kamado will crack inside, so bare this in mind when considering different brands or non-branded kamado barbecues. All the Kamados that we sell at BBQ Land have a Lifetime Ceramic Warranty - if anything cracks through normal usage when you own the grill, the part will be replaced free of charge.
