Welcome to Pizza Mastery, a hands-on class for anyone ready to master the craft of truly great pizza - from the first mix of flour and water to that glorious leopard-spotted crust fresh from the oven.

If you’ve ever wondered why some pizzas blister perfectly while others flop, or why your dough sticks, splits, or refuses to behave, this class is for you. You’ll learn the practicalities to make great dough, and what this should feel like in your hands - and you’ll leave with the skills (and dough) to make it happen at home.

Over 4 deliciously immersive hours, you’ll get hands-on from start to finish:

🍕 Mix, knead and prove two doughs from scratch - an Italian Thin & Crispy and a Neapolitan-style dough - using household mixers as well as the latest Ooni Halo Pro mixer.
🍕 Learn to shape, stretch, and top your pizzas without tearing your base or sticking to your peel.
🍕 Cook your creations on a range of legendary ovens - from the Ooni Koda and Volt to the Gozney Dome, Arc and Treads fired by both wood, gas and electricity.
🍕 Make (and eat) at as many pizzas as your belly can manage, with plenty of fresh toppings, sauce and mozzarella provided.

You’ll share a workstation with one other attendee, make dough to take home (we’ll provide containers), and enjoy fresh refreshments throughout the session.

Come hungry - because every pizza you make, you’ll want to eat.

The class runs in our purpose-built BBQ shed at BBQ Land, just outside Hitchin (SG4 7HD). Rain or shine, the ovens will be roaring.
